Light nuttiness and cinnamon aromatics, with dried cherry and citrus peel, subtle vanilla and maple marsala flavours.
This beer is inspired by two past releases: we used the unique base wort from One Night in Dunham and fermented for 2 years in second use Marsala barrels from Sojourn in Sicily.
A spontaneous beer with deep and complex flavours that can only come from spending extra years in barrels.
Deep and complex, with bright fruitiness complemented by subtle salinity and savoury nuttiness, a round acidity and soft tannin. A blend of 2, 3 and 4 year old barrels with an emphasis on the 4 year old barrels.
